Firewood Types
Softwood / Regular Grade
Softwood mix is a suitable mid grade firewood for any burning application. There are a number of advantages and disadvantages when compared to the high grade hardwoods.
Advantages:
- Low cost
- Easy to light
- Easy to split
Disadvantages:
- More smoke and sparks (popping)
- Less heat
- Burns faster and less complete (more ash)
Which is why some clients prefer to use hardwood for indoor burning, where smoke can mean more chimney maintenance, and the sparks can be a nuisance in some stove types.
The mix includes primarily: Spruce, white & black poplar, and willow
Hardwood / High Grade
The hardwood mix contains a variety of the highest grade firewoods on the market. Compared to softwoods you’ll notice the following;
Advantages:
- Considerably longer and hotter burning (up to 50% denser)
- Complete clean burn (less smoke and ash)
- Little to no sparking and popping
Disadvantages:
- Hard to split
- Can be harder to light
- Higher cost
Since we source our wood from local arborists, we have access to many exotic woods not natively grown in the area, with birch being the only typically accessible firewood hardwood.
Our mix consists primarily of ash, fruit tree (apple, cherry, pear), birch, and olive.
Apple/Cherry
Apple and cherry firewood are highly prized for smoking meat and cooking food, thanks to their unique characteristics that enhance the flavor and aroma of dishes. Apple wood, known for its mildly sweet and fruity smoke, is perfect for adding a subtle, yet distinctive taste to meats such as pork, chicken, and seafood, making it a favorite among chefs and home cooks alike. On the other hand, cherry wood offers a slightly stronger, sweet, and fruity flavor that is not only ideal for smoking red meats but also complements poultry and pork beautifully. Both types of wood burn cleanly and at a moderate heat, ensuring a consistent cooking temperature. The aromatic smoke imbued by these woods can transform the simplest ingredients into gourmet delights, infusing them with complex flavors that are hard to achieve with other cooking methods. Moreover, the natural sugars in apple and cherry wood contribute to a beautifully caramelized crust on the meat, enhancing both its appearance and taste.
